Everyone loves fresh eggs but do you have trouble keeping them intact when peeling once they’re boiled?
The fresher the egg the harder it is to get a clean egg from the shell. Here’s a trick adapted from Julia Child’s boiled egg recipe. It works every time even with eggs only a few hours old!
place eggs in boiling pan and fill with waterto cover eggs by 2 inches, place to boil.
Allow to boil for 7 minutes
spoon them into a an ice bath for 1 minute
Spoon them back to the boiling water for 3 minutes
finally spoon them back to the ice bath and peel when ready.
Shells should slip away easily.
This prevents the shell from sticking and also prevents the grey line on the outside of the yolk.
